Garlic and Amaretto; What a Day!

Surprise! I know I have been posting on Sundays the last couple of weeks but since many of us will be celebrating Easter tomorrow, I thought I would just hop on by with a couple of recipes to celebrate today. What? You didn’t know that today is National Garlic Day AND, National Amaretto Day?

Here are a couple of recipes to help you celebrate. Both were harvested from the World Cook’s Collection; Italian Kitchen by Kate Whiteman, Jeni Wright and Angela Boggiano.
First up we have Spinach and Roast Garlic Salad. Don’t you love the way Garlic and Spinach “marry” so well together?
Next up we have, ooo, la la, Stuffed Peaches with Amaretto!

  2. Dear Louise, Garlic and spinach are a match made in heaven!!! The peaches with Amaretto sound wonderful. I remember my grandfather would put his peaches in his glass of wine, before it was in vogue to do. lol

    1. My grandmother put peaches in Chianti too Catherine. The best part was, we were allowed to eat the peaches. I can still remember how delectable they were:) Happy Easter to You and Yours, Catherine!

  7. An unexpected pleasure to see you posting today! Now I'm going to have to find a recipe that uses both garlic and Amaretto. Could be hard! Maybe make a Transylvanian Cocktail? ;-) Happy Easter!

    What a wonderful post , not surprising ... all your post have lots of information and you makes them fun to read .We love spinach and o roast garlic , (even the kids) .I am glad you decided to post today ...   9. Dear Louise, A terrific post! I had forgotten that today was National Garlic Day and National Amaretto Day! Love them both, especially if you are Italian, the garlic is like second nature to us, and the amaretto is a perfect choice with peaches. Love that recipe. I love to cook spinach in garlic and some oil, the aroma is like perfume and it tastes awesome. Fabulous recipes and what lovely words for Easter.   14. I remember seeing the Two Fat Ladies making stuffed peaches. Can't remember all the ingredients, but know they used crushed amarettos. They topped them with whipped cream and baked them!

  19. Happy Belated Easter, Louise! Did you have a good time? I love garlic, & I would add a lot of garlic in my food. Have you tried those roasted garlic slices? They're really tasty, & would certainly keep those draculas away!!

  23. garlic and amaretti are odd bedfellows - I love garlic but still get constantly confused by amaretti - is it a biscuit or a drink - hope you had a lovely easter

    1. They certainly are odd bedfellow Johanna. I'm yet to find a dish where they work well together. As for whether Amaretto is a drink or a biscuit, it is a bit confusing. In this case the Amaretto is a drinking ingredient or used sometimes in baking. Amaretti is the name some Italians use for Italian macaroons. Hope this helps:)
